

Rice and Beans
Vegetarian
Ingredients
- - Kidney Beans : 1/2 bag
- - Coconut Milk : 1 Can
- - Onion : 1 Diced
- - Scotch Bonnet : 3
- - Black Pepper : 1 tablespoon
- - Salt : 1/2 tbs
Instructions
1 - Cook beans until tender, add rice, coconut milk, onion, black pepper and salt, and add enough water to just cover the ingredients.
2 - Place Scotch Bonnet peppers on top, careful not to burst them.
3 - Simmer until rice is tender.
4 - Remove pepper before serving.
