

Cottage Cheese And Feta Stuffed Peppers

- - Red Pepper : 4
- - Feta : 100g
- - Cottage Cheese : 200g
- - Chives : 1 tablespoon chopped
- - Parsley : 1 tablespoon chopped
- - Salt : 1/4 tsp
- - Lemon Juice : 1 tablespoon
Instructions
1 - Cut the peppers lengthwise and remove the seeds.
2 - In a bowl combine 3.
3 - 5 oz (100 grams) Feta cheese, 7 oz (200 grams) cottage cheese, 1 tbsp chopped chives (optional), 1 tbsp chopped parsley (optional), 1/4 tsp salt (more or less to taste) and 1 tbsp lemon juice.
4 - Fill the peppers with the mixture.
5 - Top with chopped chives and parsley.
6 - Serve.
