

Bahia-style Moqueca prawn stew

Ingredients
- - Raw King Prawns : 450g
- - Lime juice : 75 ml
- - Garlic : 3 cloves Chopped
- - Coconut Oil : 3 tablespoons
- - Spring Onions : 4 Chopped
- - Onion : 1
- - Red Pepper : 1 chopped
- - Chilli Flakes : 1 tsp
- - Paprika : 2 tsp
- - Plum Tomatoes : 3 chopped
- - Coconut Milk : 400ml
- - Coriander : 2 tbs chopped
- - Rice : To serve
Instructions
1 - step 1 Place the prawns in a bowl with 2 tbsp of the lime juice, 1 tsp of salt and 1 tbsp of the chopped garlic.
2 - Chill for 1 hr.
3 - step 2 Heat the coconut oil in a large saucepan.
4 - Add the spring onion and onion and fry for 5 mins, then add the red pepper, chilli flakes, paprika and remaining garlic.
5 - step 3 Pour in the tomatoes, coconut milk and a little salt.
6 - Bring to a simmer and let reduce for 10 mins.
7 - Add the prawns, all the marinade and remaining lime juice.
8 - Gently simmer until the prawns turn white, about 3 mins.
9 - Serve with the fresh coriander and rice.
