

Curried Spinach from Botswana

Ingredients
- - Spinach : 1 bunch
- - Tomato : 2 medium
- - Onion : 1 small
- - Oil : 2 tablespoons
- - Curry Powder : 2 tsp
- - Salt : To taste
- - Water : 1/4 cup
Instructions
1 - Heat the oil in a skillet over medium heat.
2 - When hot, add the diced onion and cook until lightly browned.
3 - Add the curry powder and salt to taste and toast for a few seconds.
4 - Add the chopped tomatoes and the water, stir well, and cook until the tomatoes begin to break down, 5-7 minutes.
5 - Add in the chopped (or baby) spinach and cook for 7-10 minutes more, until soft and wilted.
