

Breadfruit in Butter Sauce

Ingredients
- - Breadfruit : 1/2
- - Onion : 1/2
- - Olive Oil : 1 tablespoon
- - Butter : 125g
- - Onions : 3 Medium
- - Garlic : 1 tablespoon chopped
- - Tinned Tomatos : 500ml
- - Parsley : 3 tablespoons
- - Lime juice : 1 tablespoon
- - Salt : To taste
- - Pepper : To taste
- - Water : 250ml
- - Red Pepper Sauce : To taste
- - Parsley : Garnish
Instructions
1 - Cut the breadfruit, remove the seeds in the core, and peel.
2 - Boil in salted water with a little onion and oil, over high heat until tender and drain.
3 - Meanwhile, melt the butter in a frying pan and lightly brown the onion rings.
4 - Add the garlic, tomatoes, parsley, lime juice, salt, and pepper.
5 - Continue to sauté for a couple of minutes.
6 - Add the water, bring to the boil and simmer for 5-10 minutes.
7 - Slice the cooled breadfruit and place it in a serving dish.
8 - Pour the butter sauce over the breadfruit.
9 - Garnish with chopped fresh parsley.
10 - Serves 4.
