

Laos Plantain Coconut Bake (Flourless Muffin)

Ingredients
- - Coconut Cream : 450ml
- - Plantain : 4 large
- - Sugar : 4 tablespoons
Instructions
1 - Preheat oven to 350 degrees.
2 - Mash the plantains until it has a paste consistency.
3 - Mix togher the coconut cream and granulated sugar.
4 - Mix well.
5 - Add muffin liners to muffin pan.
6 - Fill the mixture into muffin pan.
7 - Bake for 45 minutes until baked all the way through.
