

Runner Bean Mash (Snijbonen Stamppot)

Ingredients
- - Runner Beans : 400g
- - Garlic : 1 clove
- - Onion : 1 chopped
- - Potatoes : 800g
- - Butter : 25g
- - Mustard : 1 tablespoon
- - Milk : 1 dash
- - Cheese : 100g
- - Bacon : 75g
- - Salt : Pinch
Instructions
1 - Wash and chop the runner beans.
2 - Place in a saucepan with salted water and bring to a boil.
3 - Cook the beans for about 10 minutes or until al dente.
4 - Drain and set aside.
5 - Meanwhile, add the potatoes and cook until tender.
6 - Heat a small skillet with a little butter and sauté the onion until translucent.
7 - Add the garlic and cook briefly.
8 - Add the runner beans to the pan and stir-fry for a few minutes.
9 - Meanwhile, mash the potatoes with a masher.
10 - Add a knob of butter and a splash of milk.
11 - Add the bean mixture and grated cheese.
12 - Season with salt, pepper and mustard.
13 - Fry the bacon and serve with the bean mash.
