- - Carrots : 4 sliced
- - Red Cabbage : 1/2
- - Red Onions : 2 sliced
- - Mint : Handful
- - Coriander Leaves : Handful
- - Roasted Peanut : Handful
- - Lime : Juice of 2
- - Ground Nut Oil : 1 tablespoon
- - Red Chilli : 1 chopped
- - Brown Sugar : 1 tablespoon
Instructions
1 - step 1 Tip the carrots, cabbage and onions into a bowl.
2 - Make the dressing by stirring the ingredients together until the sugar has dissolved.
3 - Pour over salad, tossing the vegetables in the dressing.
4 - Add the herbs, toss again, then scatter over the peanuts.
