Ingredients
- - Olive Oil : 3 tablespoons
- - Onion : 1 small finely diced
- - Garlic : 2 cloves chopped
- - Tinned Tomatos : 225g
- - Tomato Puree : 1 tablespoon
- - Paprika : 2 teaspoon
- - Chilli Powder : Pinch
- - Sugar : Pinch
- - Parsley : Chopped
- - Potatoes : 900g
- - Olive Oil : 2 tbsp
Instructions
1 - step 1 Heat the oil in a pan and fry the onion for about 5 mins until softened.
2 - Add the garlic, chopped tomatoes, tomato purée, sweet paprika, chilli powder, sugar and a pinch of salt, then bring to the boil, stirring occasionally.
3 - Lower to a simmer and cook for 10 mins until pulpy.
4 - Can be kept chilled for up to 24 hrs.
5 - step 2 Heat oven to 200C/180C fan/gas 6.
