Ingredients
- - Coconut Milk : 2 cups
- - Water : 2 cups
- - Ginger Paste : 1/4 tsp
- - Ginger : 1
- - Bay Leaf : 1
- - Rice : 2 cups
- - Eggs : 4
- - Cucumber : 1
- - Peanuts : 1 cup
- - Anchovy Fillet : 4 oz
- - Vegetable Oil : 2 tbs
- - Onion : 1
- - Garlic : 3 cloves
- - Shallots : 3
- - Chilli Powder : 2 tsp
- - Anchovy Fillet : 4 oz
- - Sugar : 3 tbs
- - Tamarind Paste : 1/3 cup
Instructions
1 - In a medium saucepan over medium heat, stir together coconut milk, water, ground ginger, ginger root, salt, bay leaf, and rice.
2 - Cover, and bring to a boil.
3 - Reduce heat, and simmer for 20 to 30 minutes, or until done.
4 - Step 2 Place eggs in a saucepan, and cover with cold water.
5 - Bring water to a boil, and immediately remove from heat.
