Ingredients
- - Salmon : 400g
- - Avocado : 3
- - Cucumber : 1
- - Spinach : 400g
- - Mint : 4 tbs
- - Lime : zest and juice of 1
- - Honey : 2 tsp
- - Olive Oil : 3 tbs
Instructions
1 - Season the salmon, then rub with oil.
2 - Mix the dressing ingredients together.
3 - Halve, stone, peel and slice the avocados.
4 - Halve and quarter the cucumber lengthways, then cut into slices.
5 - Divide salad, avocado and cucumber between four plates, then drizzle with half the dressing.
